TASTING -AD HOC-
APPEARANCE
The wine is clear, pale, ruby coloured, with tears, and medium gliceric legs. Some purple brightness. The bottle present a very good natural cork, and some information in the backlabel. Titolo is the place, the village.
NOSE
The wine is clean, pronounced intensity.
Volcanic, earthy, leather, vegetal tobacco (dry sheets) aromas.
Otherwise, flowers (roses, violets), and red cherry, hues of strawberry jam, not sweet or volatils.
Note: A little bit of reduction, but is dissipated soon.
PALATE
Good first impression.
High acidity and tannins (high quantity of new wood) that show a baby in your “mouthattack”, dry, medium plus alcohol. It presents a medium young body.
Oaky, Stony and mineral. Earthy flavours, irony and thyme.
Good medium volumen, some vertical palate, straight and some igneous rocks and slate maybe.
Medium+ rocky finish, with berries (blackberry, blackcurrant) and red plum.
Tasting after 24 HOURS
First of all,….the volcano: spicy, earthy, phosphorus, sulfur, mineral, stony. It smells deep, and I love this aromas, with high-pronounced intensity.
Dry and high in tannins in palate. The Acidity is high.
Notes of Red plum, red cherry, blackberry, cocoa, earthy, tobacco and mineral, some roughly textures in post-palate.
Medium+ finish.
CONCLUSIONS
The wine needs tranquility, develop, time. It is young, with good aromas and flavours, but the wood(oak) is present and the tannins, so green, are present. It is a potential wine, and to opinate I would need to taste an old Titolo, to write about its evolution.
Now the tannins are showing the potential. The wood is present and not yet integrated totally, but with high potential in the next 10 years.
PAIRING ad hoc
Hare stew with shallots, cocoa, thyme infusion and spearmint.
