ORIGEN: APALTA 2013

Grapes come from the Colchagua Valley, well known for warm temperatures and no rainfall during the ripening period, thanks to a mountain cord protecting the valley from Pacific Ocean influence. The great thermal delta between day and night is the key factor for colour and tannins developing in red grapes. Here it allows these grapes to fully ripen delivering wines of soft tannins and dark ripe fruits aromas.

HARVEST

Handpicked from April 23rd to May 3rd.

VINIFICATION

Bunches were handpicked and carefully selected. Fermentation takes place in open top tanks, allowing a very careful manual handling of the skins cap to achieve soft and complete extraction. Fermentation temperature is kept between 24°C and 28° C. Then the wine remained in a long post-fermentation maceration for 21 days. The wine underwent oak ageing of 18 months in 100% French oak 225lt casks.

TASTING by Javier Azcona

Appearance: Red ruby, clair, clean, no defects, no hazy, medium intensity. Unctuosity +++, gliceric tears. Blue label and good cork

Nose: Clean, medium+ intensity, some smoky aromas, beicon, dark cherries, tobacco.

Palate: Off-dry, voluminous in attack, medium+ acidity, medium alcohol, medium tannins soft and slighty. Some of astringency.

Medium+ body, medium+ intensity flavours: Dark Cherry, kirsch, sour cherries, Redberries, mint and chocolate (after eight). Very fruity. The wood is soft and some sweet. Hints of nuts (peanut), earth, forest. Brandy wood so far.

Long finish, intense and fruity.

24 hours.-

No more aromas than yesterday, more silky, and open. Clean and complex in my nose.

Tranquile palate, medium acidity, medium+ tannins (soft, creamy), medium+ alcohol but integrated and soft. It is a lineal wine, purity from Apalta. Medium+ intensity and flavours like chocolate

Mint, coconut, nuts (wallnut), some of leather. Long finish with tobacco hints and a very little notes of earth and iron…the earth from Chile.

CONCLUSIONS

We have noticed both Carmenere (very good Quality) and a mtured Cab. From Apalta. High quality wine, with some potential for ageing (5-10 years), but you can drink now in a very good conditions and moment to consume. The acidity and softy tannins do that the wine was be almost perfect. There are complex aromas and flavours, very silky. The price it is not a problem.

PAIRING

Duck (breast) with sour cherries, BBQ and carbon in fire. Satellite from potatoes and lime gelatin.
