It begins with the tell-tale herbal burst of Pineau d’Aunis (tarragon galore) and seems rather anorexic on the palate. But with an hour’s worth of air it fills out beautifully and getss all sexy... Aromas and flavors of licorice, cherry, blackberry and wild strawberry,wet cement, loam and that herbal edge. A very compelling nose, unusual in the way it holds out its elements. Light and graceful in the mouth, with the fruit taking center stage initially, followed by a nice bitter bite (an acquired taste, which Josie takes to quickly) and slightly gritty tannins. Long, subtly layered aftertaste. A delicious drink.
