We have made this wine every year since 1993 and the grapes come from our original planting at Horsmonden (planted 1991).
The blend of varieties includes Bacchus, Ortega, Faber, Siegerrebe and Huxelrebe - all aromatic varieties - that blend together to make a complex, fragrant and balanced dry white wine.
No yeast is added because the grapes have yeast on their skins.
The alcohol is 11.5% giving the wine a wonderful lightness and delicacy.

TASTING
Clear, lemon-green colour, pale.
Some green, clean, medium+ intensity aromas.
Asparragus, green pepper, capsicum, acacium.
In the palate, medium+ acidity, low alcohol, medium body, dry.
Flavours medium intensity, are green like my nose. Not rounded.
Medium finish, good balance and medium structure.
In conclusion, it is a good wine, with good acidity, balance green flavours and esay to drink, but no low-end wine. Some complex from aromas, hybrids varieties, and under-ripe harvest, but not agressive. Maybe 2 years more ageing and rounded acidity.
PAIRING
Swordfish, green pepper and fine shells with lime.
