TASTING

The wine is deep amber, bright, with unctuous legs on the glass, almost oily.

The wine has medium + intense aromas, tertiary aromas from oxidative development, herbal, honey, dried peach, nuts, tobacco.

on the palate is dry, high in  alcohol not burning, medium acidity because of concentration, ageing and evaporation.

It presents medium + intensity flavours of honey, dried peach, nuts, tobacco, cedar, orange peel, and is a Full bodied wine, with good volume, and salty and stony texture.

Long finish, concentrated in dried fruit (fig, peach), lemon peel, and vanilla, cedar.

The quality is very good, a high quality balance of acidity, age and high alcohol, with a line in all SC., longevity and finish full of dried fruit and tertiary flavours more than primary. The wine is higly concentrated in developed aromas and flavours of oxidative ageing (nuts, oak, dried fruit), and the acidity is remarkable for a Sherry wine. the wine gives complexity and needs expression with overture and time, and it was some potential for ageing, good alcohol and acidity, and long finish of quality in tertiary flavours, serious tannins, some sweet hints (caramel).

A pairing with cauliflower and potatoe boiled.
