TASTING

The wine is deep amber colour, bright and with tears. Clear.

Clean condition and pronounced aromas of fig, caramel, chesnut, liquorice, orange blossom (oxidative ageing).

The wine is dry, and shows high acidity, high alcohol, full bodied.

It has pronounced intensity, and flavours of caramel, walnut, fig, raisin, dried peach, lemon peel and vanilla.

Crispy texture and long finish.

Outstanding quality, because has a perfect balance/integration of structural compounds (acidity and sweetness), with soft tannins, and not burning alcohol. The flavours are delivered oxidative and maderized, with very good complexity in tertiaries flavours and a very long finish and concentration. The aromas and flavours has intensity of oxidative ageing in casks (canteiros), with hints of salty and marine notes, that invite you to the next drink. It is a stunning wine.

You can drink now, not suitable for further ageing. It presents very good acidity and alcohol to develop potential oxidative flavours and soft astringency. The tertiary aromas and flavours are soft and delicious, such a dried fruit and nuts.

Sercial Colheita (single harvest 2001). High priced, more than 25 euros.

The wine is aged in Canteiros (maderization process) not skin contact, dry style with less than 25 gr/l of residual sugar, baumé over 1º, and 1 week of fermentation, almost to dry.

Pairing with artichokes and anchovies as aperitif.
